Our Longmont location is a coffee roastery and tasting room, so it is not the typical coffee shop that you’d normally encounter where you order a specific coffee drink. At our roastery we usually have a couple of our coffees brewed up in airpots for visitors to sample. We also have a wide variety of freshly roasted coffees for purchase.

The word natural refers to the processing method. A natural coffee (sometimes called dry processing or sun-dried processing coffee) is dried on raised beds with the coffee skin and mucilage still covering the seed. After drying the coffee, these outer layers are removed. This is different from a washed coffee where this outer layer is removed (washed) before drying the coffee seed (bean). Because of the way the coffee is processed, natural coffee will typically have a subtle sweet fruit flavor profile not usually found in a washed coffee. It creates a truly wonderful tasting beverage!

A Specialty coffee is one that is deemed to be some of the best coffees offered. To be graded as a Specialty coffee the coffee must have been given a score of at or over 80 out of 100 points using these criteria:
Bean size and uniformity
Lack of defects
Density
Moisture Content
Cupping to evaluate aroma, aftertaste, acidity and body
The scale used to determine the grade has been developed by the SCA (Specialty Coffee Association)
